These Gougeres (cheese puff pastries) are incredibly delicious.  We flavoured the Gruyere cheese with some cayenne and paprika.  The assigned bakers forgot to remove my Gougeres in the oven and they became overbaked/dry.  The Gougeres in the picture are from Tricia, who so kindly gave me some of hers.

Gateau St. Honore - this is an odd dessert I've never seen before.  It's so much work to put this together.  The bottom crust is a Pate Brisee (similar like a tart dough).  On top of the Pate Brisee is puff pastry.  Then we made little puff pastry, coated them with caramel (yes, so in addition to all these we had to make caramel), filled them with cream made of pastry cream (yep, we also had to make pastry cream) lightened with Italian Meringue (just to add another component to the whole dessert).  This dessert is named for the French Patron Saint of Bakers and Pastry Chefs - St. Honore.
