Cygnes (Swans)
These might just be the cutest pastry I have ever made. They are filled with pastry cream, fruits and whipped cream. It's quite a lot of work for a little pastry.
Paris-Brest
This is a puff pastry ring filled with praline cream. Interesting tid-bit about this dessert - it was created in 1891 to celebrate the Paris-Brest-Paris bicycle race. The round shape represents a bicycle wheel.
